Would you like to have one of your SIM-cards to be called "Travel" for example? We have covered the steps you need to take :)
Please do the following:
Go to Settings -> tap Cellular.
Select the eSIM label you would like to change the name of.
Tap Cellular Plan label.
Tip: If you have the phone set to non-US English, the menu will be called Mobile Data (instead of Cellular).
